Rasam (Amma Style)

Ingredients:
Cooked Dal + Water : 2 Tumbler
Tamarind Water : 1 Tumbler
Rasam Powder: 1 spoon
Perungayam : one pinch
Vendhayam : 4 or 5 seeds
Karuvepilai,salt,kothamalli : as required
Dhania Powder: 1/2 spoon
Jeera Powder: 1/2 spoon
Chilly Powder: 1/2 spoon
Pepper Powder: 1/2 spoon
Dry red chilly: 1
Garlic : 5 nos (cut into pieces or pressed)
Oil,Mustard seeds : As required for seasoning
Tamato: 1 medium size(chopped)

Method
1) Add oil to a pan. when hot,add mustard seed and allow it to splutter.Add dry chilly and vendhayam
2) Add Tamato,Garlic,Perungayam and fry it till Tamato peels off add karuvepillai and fry it.
3) Add Tamarind water, rasam powder 1/2 spoon,pepper dhaniya,jeera and chilly powder.Let it boil for 10 minutes.
4) Add cokked dal and dal water., allow it to boil for 5 minutes.
5) Add 1/2 spoon rasam powder and corinader leaves and boil for 2 minutes.

Sambar (Amma Style)

Ingredients:
Toor Dal : 1 tumbler
DrumStick : 2 ( Nos Cut into pieces)
Brinjal : 2 (Nos cut into pieces)
Sambar Powder : 2 spoons
Chilly Powder : 1 spoon
Salt : 1 spoon(as per taste)
Dhaniya Powder : 1/2 spoon
Jeera Powder : 1/4 spoon
Oil : As required
AsaFortida : (Perungayam) 1 pinch
Curry Leaves : As RequiredKothamalli,Mustard seeds
Onion :1 meidum size
Tamarind Paste :1 small lemon size soaked in water
Tomato : 1 medium size

Method:
1) Cook dal with two tumbler water, add a pinch of turmeric powder and 1 spoon oil for Dal to cook well.
2) Add a Cooked Dal to a vessel and add the cut vegetables and Tamato. Add two tumblers water,sambar powder,dhania powder,jeera powder and chilly powder.
3) See whether vegetables are cooked properly. You can add salt when the vegetables are half cooked.
4) Add Tamarind water (1 Tumbler)
5) Allow it to boil for some time, keep it aside.
6) In a small pan or vakanam add 3 spoons oil. when it is hot, add mustard seeds and allow it to splutter. Add Onions,Karivepilai,perungayam and fry till onions turn gold brown.
7) Add the above to the Sambar and add Coriander leaves and let it boil for 5 minutes.
